Applesauce Walnut Cake Recipe

Ingredients
  • 1 c Shortening; soft
  • 1 c Candied red cherries - cut in small pieces
  • 4 Eggs
  • 3/4 ts Cloves
  • 2 c Sweetened canned applesauce
  • 3/4 ts Nutmeg
  • 1/2 ts Soda
  • 1 1/2 c Brown sugar, firmly packed
  • 1 ts Baking powder
  • 1 c Pitted dates - cut in small pieces
  • 1 c Raisins
  • 2 ts Cinnamon
  • 2 1/2 c Sifted all-purpose flour
  • 1 1/2 c Quaker Oats, uncooked -
  • 1 c sliced nutmeats
  • 1 1/2 ts Salt

Directions
  • Step #1 Beat shortening & sugar together until creamy.
  • Step #2 Add eggs, one at a time, beating well after each addition.
  • Step #3 Sift together 2 c of the flour, baking powder, soda, salt & spices.
  • Step #4 Add alternately with applesauce to creamed mixture; mix well.
  • Step #5 stir in the oats.
  • Step #6 mix remaining 1/2 c flour with raisins, dates, cherries and nutmeats; stir this to coat fruits & nutmeats evenly with flour.
  • Step #7 Stir into batter.
  • Step #8 pour this into 2 greased & waxed paper-lined 8-1/2" x 4-1/2" x 2-1/2" loaf pans.
  • Step #9 Bake in preheated very slow oven (275 F.
  • Step #10 ) about 2 hrs.
  • Step #11 Set pan of hot water in bottom of oven while loaves are baking.
  • Step #12 Loosen edges; cool on wire rack about 10 mins.
  • Step #13 remove this from pans; cool thoroughly.
  • Step #14 Wrap cooled bread & store one day before slicing.
