Apricot Chocolate Bread Recipe

Ingredients
  • 1/2 c Apricot nectar
  • 1 tb Prepared Mustard
  • 12 x Dried Apricot halves
  • 1/2 ts Ground Ginger
  • 6 x Chicken thighs,skinned
  • 2 tb Soy sauce
  • 1 tb Lemon juice
  • 1/4 c Dry sherry

Directions
  • Step #1 mix all but chicken & dried apricots.
  • Step #2 Mix well, set aside.
  • Step #3 Trim excess fat from chicken.
  • Step #4 Rinse chicken with cold water, pat dry.
  • Step #5 Place chicken in a 12x8x2" baking dish.
  • Step #6 Pour reserved apricot nectar mixture over chicken.
  • Step #7 Cover & bake this at 350 deg F for 45 mins.
  • Step #8 Uncover, & place aproicot halves in apricot nectar mixture.
  • Step #9 Continue baking, uncovered, 15 mins or until chicken is tender.
  • Step #10 Remove chicken to a warmed serving platter, discarding apricot nectar mixture.
  • Step #11 Garnish each thigh with 2 apricot halves.
  • Step #12 Serve as soon as possible.
  • Step #13 PER SERVING: 192 calories, 18 g protein, 7.
  • Step #14 7 g fat, 8.
  • Step #15 5 g carbohydrates, 65 g cholesterol, 1.
  • Step #16 3 mg iron, 290 mg sodium, 16 mg calcium.
