Apricot Cream Topping Recipe

Ingredients
  • 3 tb Lemon juice
  • 1/3 c Sherry
  • 3 tb Orange juice
  • 1/2 ts Lemon rind, grated
  • 2 tb Flour
  • 3 Egg yolks
  • 2/3 c Apricot jam, strained

Directions
  • Step #1 Yield: 1 Add sherry to flour.
  • Step #2 Mix until smooth.
  • Step #3 Add apricot jam, lemon rind & juice, & orange juice.
  • Step #4 Stir until smooth.
  • Step #5 place this in a heavy saucepan.
  • Step #6 Cook over low heat/flame, stirring constantly until thick.
  • Step #7 Stir a few tbsps of hot sauce into egg yolks.
  • Step #8 Then pour egg yolks into remaining hot mixture, continuing to stir.
  • Step #9 Cook & stir a few more mins, being careful not to boil, until cream is smooth & thick.
