Apricot Lite Jam Recipe

Ingredients
  • 1 c Sugar syrup
  • 2 c Smashed apricot pits
  • 1/2 ts Ground coriander
  • 1/2 ts Ground cinnamon
  • 2 c Vodka 100 proof

Directions
  • Step #1 Partly fill a cloth bag with the apricot pits (available at most health food stores).
  • Step #2 Smash with a hammer, keeping shells & meaty centers.
  • Step #3 Place smashed pits in a 1-quart container.
  • Step #4 Add cinnamon, corriander, & vodka.
  • Step #5 Store for 2 months in a cool dark place.
  • Step #6 Then filter through a cheesecloth lined strainer & discard fruit pits.
  • Step #7 Strain a few times until clear.
  • Step #8 Add sugar syrup & age for an extra 2 weeks.
  • Step #9 Recipe may require some finetuning & apricot extract can be added to offer extra flavoring.
  • Step #10 Yield: 3 c Containe: Wide mouth liter jar.
