  • Step #1 1/2 Red Bell Pepper -- Roasted : & sliced : Olive Oil 1 sm Onion -- sliced 1 sm Tomato -- sliced 1 Jalapeno -- Finely minced 2 Apricot -- sliced 2 TB Rum, & roast half of it (brush with olive oil & put under broiler very close to heat until blackened, remove seeds, Dark : Apple Cider Cut a red bell pepper in half, about 5 mins).
  • Step #2 Chop.
  • Step #3 Saute onion in about a tbsp of olive oil until translucent.
  • Step #4 Add tomato & jalapeno & saute about another 5 mins, until tomato is cooked.
  • Step #5 Add cider to cover & apricots & boil down until cider is almost all boiled off.
  • Step #6 sliced roasted bell pepper & stir.
  • Step #7 Add dark rum & flambe.
  • Step #8 (light & swirl until it goes out).
