Apricot Sc Pound Cake Recipe

Ingredients
  • 2 tb Water
  • 3/4 c Apple Juice
  • 1/4 c Honey
  • 1/2 c Orange Juice
  • 2 ts Cornstarch
  • 4 oz Apricots; Dried
  • Cinnamon; Ground, To Taste
  • 1 tb Sweet Vermouth
  • Ginger; Ground, To Taste

Directions
  • Step #1 Cover the apricots with the apple juice & bring to a full boil.
  • Step #2 Reduce the heat & let simmer, covered, 30 mins.
  • Step #3 Stir the apricots every once in awhile so they will not stick or burn.
  • Step #4 Let the apricots cool, then strain.
  • Step #5 Reserve the cooking liquid.
  • Step #6 Chop the cooked apricots & set aside.
  • Step #7 In a 2-quart saucepan mix the orange juice, cornstarch, water, honey, ginger & cinnamon.
  • Step #8 Heat, stirring constantly, until thickened slightly.
  • Step #9 Remove the pan from the heat & add the apricots, their cooking liquid & vermouth.
  • Step #10 Serve hot or well chilled.
  • Step #11 Each tbsp contains: Cal Prot Carb Fib Fat Fat Chol Sodium.
