Apricot-cardamom Bars Recipe

Ingredients
  • 2 Eggs
  • 1 ds Ground cinnamon
  • 1 c Milk
  • 1/2 c Stale bread crumbs,w/o crust
  • 1/3 c Sugar
  • 1 lb Apricots
  • 1/2 c Butter
  • 1/8 ts Salt

Directions
  • Step #1 Note: Apricots should be pitted & quartered.
  • Step #2 Melt 3 tbs.
  • Step #3 butter in saucepan over med-heat/flame.
  • Step #4 Add & cook apricots, tossing every once in awhile, until tender & translucent.
  • Step #5 Remove apricots.
  • Step #6 Add remaining butter to saucepan & cook bread crumbs over very low heat, stirring regularly, until uniformly golden & crisp.
  • Step #7 Spread crumbs in bottom of lightly buttered gratin dish.
  • Step #8 Arrange apricots on bed of crumbs & Sprinkle top lightly with cinnamon.
  • Step #9 Whisk together milk, eggs, sugar & salt in bowl.
  • Step #10 Pour liquid slowly over apricots.
  • Step #11 bake this at 325F degrees l/2 hr.
