Apricot-walnut Strudel Cookies Recipe

Ingredients
  • 1 1/2 ts Kosher salt
  • 2 tb Brown sugar
  • 6 tb Pareve margarine
  • 4 c Apricot nectar
  • 1/4 c Pitted prunes
  • 5 lb Sweet potatoes; peeled and sliced 1/4" thick
  • 4 lg Carrots; pared & sliced
  • 1/4 c Honey
  • 1/2 ts Cinnamon
  • 1/2 ts Ground pepper
  • 1/2 c sliced dried apricots
  • 1 c Chicken broth

Directions
  • Step #1 preheat your trusty oven to 400F degrees F.
  • Step #2 Generously grease a 13-by-9-inch baking dish.
  • Step #3 mix nectar, apricots, broth, salt, honey, margarine, brown sugar, cinnamon & pepper into a large saucepan and heat until margarine melts.
  • Step #4 Add sweet potatoes & carrots; bring to a boil.
  • Step #5 Cover, cook this until potatoes begin to soften, about 15 mins.
  • Step #6 Using slotted spoon, transfer potatoes & carrots to prepared dish.
  • Step #7 Add prunes.
  • Step #8 Pour juices from pot over, press firmly to compact.
  • Step #9 Cover with heavy foil.
  • Step #10 Bake 30 mins.
  • Step #11 Uncover & bake this until potatoes are tender & beginning to brown on top, about 55 mins.
  • Step #12 let this stand 15 mins.
