Apricots With Anisette & Fennel Recipe

Ingredients
  • 4 6 inch sprigs fresh green Bronze fennel
  • 1/2 c Anisette
  • 2 1/2 c Water
  • 3 lb Fresh apricots
  • 2 c Sugar

Directions
  • Step #1 ALTERNATIVES--- Cinnamon basil & cinnamon Liqueur are an alternative.
  • Step #2 Prepare jars, lids & boiling water bath.
  • Step #3 Wash & dry the apricots, then prick each one several times.
  • Step #4 mix the water, anisette & sugar in a pan & cook over a med-high heat, stirring frequently, until the mixture boils & the sugar is dissolved.
  • Step #5 Add the apricots & let simmer for 3 mins.
  • Step #6 Fill each hot dry jar with the fruit & two fennel springs, leaving 1/2 inch headspace.
  • Step #7 Pour hot liquid over the fruit until just covered.
  • Step #8 Wipe the rims with a clean towel & attach the lids securely.
  • Step #9 Place the jars in boiling water bath, & when the water returns to boil, process for 25 mins.
