Ingredients
6 oz Raisins, plain or golden
4 oz Sugar, brown, light
1/2 ts Ginger, ground
1 lg Egg; beaten
2 ts Baking powder
2 oz Citron, candied; sliced
10 oz Flour
1 ts Mixed spice
4 oz Butter
6 oz Golden syrup
1/2 ts Baking soda
4 tb Milk
Directions
Step #1 Equal parts of cinnamon, nutmeg & allspice.
Step #2 Lyons' Golden Syrup, carried in some fancy groceries.
Step #3 If you can't find it, use Karo light corn syrup.
Step #4 Sift the flour with the soda & baking powder, & the mixed spice & ginger: then add the brown sugar, sliced peel & raisins: mix.
Step #5 Make a well in the center.
Step #6 Melt the butter with the syrup over low heat, then pour this into the well in the mixture.
Step #7 Add the beaten egg and milk & mix very well.
Step #8 pour this into a greased 2-lb loaf pan & bake in a preheated oven at 325F F for 40-50 mins, or until it tests done.
Step #9 This bread will keep moist for several days, & actually improves somewhat during this period.
