Ingredients
  • 6 oz Raisins, plain or golden
  • 4 oz Sugar, brown, light
  • 1/2 ts Ginger, ground
  • 1 lg Egg; beaten
  • 2 ts Baking powder
  • 2 oz Citron, candied; sliced
  • 10 oz Flour
  • 1 ts Mixed spice
  • 4 oz Butter
  • 6 oz Golden syrup
  • 1/2 ts Baking soda
  • 4 tb Milk

Directions
  • Step #1 Equal parts of cinnamon, nutmeg & allspice.
  • Step #2 Lyons' Golden Syrup, carried in some fancy groceries.
  • Step #3 If you can't find it, use Karo light corn syrup.
  • Step #4 Sift the flour with the soda & baking powder, & the mixed spice & ginger: then add the brown sugar, sliced peel & raisins: mix.
  • Step #5 Make a well in the center.
  • Step #6 Melt the butter with the syrup over low heat, then pour this into the well in the mixture.
  • Step #7 Add the beaten egg and milk & mix very well.
  • Step #8 pour this into a greased 2-lb loaf pan & bake in a preheated oven at 325F F for 40-50 mins, or until it tests done.
  • Step #9 This bread will keep moist for several days, & actually improves somewhat during this period.
