Step #1 Here are my favorite tips & basic bread recipe: 1.
Step #2 Don't by those tiny packets of active-dry yeast.
Step #3 Get it in bulk in a health-food store.
Step #4 They charge at least 10x more for those tiny packets -- you're paying almost entirely for the packaging.
Step #5 (Store yeast in the fridge.
Step #6 ) 1 packet = 1 TB.
Step #7 2.
Step #8 Wheat gluten is very useful in helping the dough rise.
Step #9 I add around 1 TB per c of non-bread flour ingredients.
Step #10 3.
Step #11 Oil is NOT necessary & actually detracts from the taste.
Step #12 All you really need for good bread is flour, yeast, salt, & water.
Step #13 Everything else is optional.

Step #15 The best breads are simply a mix of flours (whole wheat, buckwheat, rice, rye, oats, corn, or whatever you like).
Step #16 Remember thought that wheat flours are necessary for the gluten content, unless you add gluten separately.
Step #17 Adding fruits & herbs & flavored liquids are interesting but I prefer "pure" breads.
Step #18 I prefer graham flour over regular whole wheat.

Step #20 Each machine is different & my recipes are usually not exact -- if the dough looks sticky & isn't forming a ball then it's too wet: add more flour; if it looks dry (ball doesn't have a relatively smooth surface, for example) add more liquid a tbsp or two at a time.
Step #21 OK, so with all that idealism taken care of here's my basic bread recipe: 1 TB active dry yeast 1 1/2 c bread flour 1 1/2 c graham (whole wheat) flour 1/2 c rye flour (use the coarse grind, preferably) 2 TB wheat gluten (sometime called vital wheat gluten) 1 tsp salt 1 TB honey 1 2/3 c water Add ingredients in order suggested by your bread machine manual.
Step #22 This is intended for a 3 c bread maker, if your machine is smaller just scale it accordingly.
Step #23 Similarly, your bread maker may suggest using less than 1 TB yeast.
Step #24 For a particularly festive bread try adding 1 TB basil 1 TB tarragon 1 tsp rosemary sliced garlic.
