Creamy Slow Cooker Potato Cheese Soup Recipe

Ingredients
  • 1 tbsp dried, minced garlic
  • 4 stalks celery, sliced
  • 5 lbs russet potatoes, peeled & cubed
  • 6 slices crisp cooked bacon, crumbled
  • 1 c milk
  • 1 c warm water
  • 1 bay leaf
  • 1/2 white onion, sliced
  • 1/4 c all-purpose flour
  • 2 c water
  • 1/4 c butter
  • 1 c shredded Cheddar cheese
  • 2 large carrots, sliced
  • salt & pepper to taste
  • 2 tbsps chicken soup base

Directions
  • Step #1 Melt butter in a large saucepan over med-heat/flame.
  • Step #2 Cook onion in butter until translucent.
  • Step #3 Stir in flour until smooth, garlic, carrots, celery, then slowly stir in the 2 c water, salt, & pepper.
  • Step #4 Heat through, then stir in the milk.
  • Step #5 Dissolve chicken base in 1 c warm water, & pour this into vegetable mixture.
  • Step #6 Place potatoes in slow cooker, & pour heated vegetable mixture into potatoes.
  • Step #7 Place bay leaf in pot.
  • Step #8 Cover, & cook 5 hrs on High, or 8 hrs on Low.
  • Step #9 Remove bay leaf.
  • Step #10 Puree about 4 c of the soup in a mixer or food processor/blender, & then stir pureed soup into contents of slow cooker.
  • Step #11 Stir in cheese & bacon until cheese is melted.
