Arizona Sunset Cheesecake Recipe

Ingredients
  • 32 oz Tomatoes, canned
  • 2 oz Monterrey jack, shredded
  • 1 md Green pepper sliced
  • 2 md Garlic clove
  • 10 oz Corn, frozen
  • 2 tb Chili powder
  • 15 oz Kidney beans, canned
  • 1 md Onion sliced
  • 2 tb Vegetable oil
  • 8 oz Macaroni, uncooked
  • 1/2 ts Cumin seed, ground
  • 1/2 ts Salt

Directions
  • Step #1 Chop the onion & green pepper.
  • Step #2 Drain & rinse the canned beans.
  • Step #3 Cook macaroni per instructions & drain.
  • Step #4 In a large skillet heat oil over medium high heat.
  • Step #5 Add onion, garlic, chili powder, green pepper, salt & cumin; saute for about 4 mins until vegetables are tender.
  • Step #6 stir in the the tomatoes (undrained) breaking them with a spoon.
  • Step #7 Add kidney beans & corn (already thawed); bring to a boil.
  • Step #8 Reduce heat to simmer & continue cooking for 15 mins stirring every once in awhile.
  • Step #9 Toss in cooked macaroni.
  • Step #10 Sprinkle top with the shredded cheese.
