Arroz Con Pollo - Sunset Recipe

Ingredients
  • 3/4 c sliced onions
  • 2 ts Olive oil
  • 1/8 ts Saffron -- optional
  • Divided
  • 1/2 ts Fresh ground pepper --
  • 14 1/2 oz Chicken broth, defatted-1 cn
  • 16 oz Stewed tomatoes -- or 14.5
  • 2 lb Chicken breast halves
  • Salt
  • 1 lg Green pepper -- sliced
  • 1/2 ts Paprika -- divided
  • 1 c Long-grain rice
  • 1 tb sliced parsley -- fresh
  • Without skin -- 4 halves
  • 1/3 c Dry white wine
  • 1 1/2 ts Garlic -- minced
  • oz Can`

Directions
  • Step #1 1.
  • Step #2 Cut each breast in 2 pieces.
  • Step #3 mix 1/4 tsp each salt, pepper, & paprika; rub over chicken.
  • Step #4 2.
  • Step #5 Heat oil over high heat.
  • Step #6 Add chicken; cook this until golden on all sides, 10 mins.
  • Step #7 Remove chicken.
  • Step #8 3.
  • Step #9 Add green pepper, onions, & garlic to skillet.
  • Step #10 Cook, stirring until vegetables are tender.
  • Step #11 Add rice; cook, stirring until rice is opaque, 1 to 2 mins.
  • Step #12 4.
  • Step #13 stir in the broth, white wine, 1/2 tsp salt, 1/4 tsp each paprika nd pepper, & the saffron powder.
  • Step #14 Bring to boil over high heat.
  • Step #15 Reduce heat to low; cover & let simmer,15 mins.
  • Step #16 5.
  • Step #17 stir in the chicken & stewed tomatoes with their liquid; return to boil, breaking up tomatoes with spoon.
  • Step #18 Cover & let simmer 20 mins more, stirring once, until chicken & riceare tender & liquid is absorbed.
  • Step #19 stir in the parsley.
  • Step #20 Spoon onto warm platter.
