Step #1 1 1/2 lb chicken legs, skinless -- : cut up & defatted 2 TB olive oil 2 md onions -- peel thinly slice 1 ts salt 1/4 ts freshly ground black pepper 1/2 ts ground saffron -- dissolved : in 2 TB hot water 1/4 ts turmeric 3 c sliced fresh parsley 1/2 c sliced fresh mint 5 TB fresh lime juice 1 lb fresh artichoke hearts STEP #1 - Heat a non-stick saute pan & lightly brown chicken.
Step #2 Add 1 tbsp oil & the onion.
Step #3 Fry over med-heat/flame, stirring every once in awhile, for 20 mins or until onion becomes translucent.
Step #4 Add salt, pepper, saffron water, & turmeric.
Step #5 Pour in 1 1/2 c water.
Step #6 Cover & let simmer over low heat/flame for 30 mins, stirring every once in awhile.
Step #7 STEP #2 - In a non-stick skillet, fry the parsley & mint in 1 tbsp oil over med-heat/flame for 10 mins & add to the chicken.
Step #8 STEP #3 - Add lime juice & the artichoke hearts to the chicken.
Step #9 Cover & let simmer for 40 to 55 mins over low heat/flame.
Step #10 STEP #4 - Check to see if the artichoke hearts are tender.
Step #11 Taste the khoresh & adjust Spice uping.
Step #12 Transfer it to a deep casserole.
Step #13 Cover & place this in a warm oven until ready to serve.
Step #14 STEP #5 - Serve hot from the same dish with steamed basmati; cook it very slowly with a very tight fitting lid.
Step #15 Add salt to water to help rice withstand a longer cooking time.

Step #17 ) VARIATIONS: For ab ghureh substitute 3/4 c unripe grape juice for the lime juice.
Step #18 Frozen (2 9-oz pkgs) or bottled artichokes may be substituted.
Step #19 Drain well.
Step #20 If pre-cooked, adjust cooking time, adding artichoke hearts when appropriate to step 3.
Step #21 Chicken can be replaced with 1 lb lean stew meat such as lamb, veal or beef, cut into 1 inch cubes.
Step #22 In step 1, increase water to 2-1/2 c; & let simmer for 55 mins insteadof 30 mins.
