Artichoke With Mamas Cornbread Dressing Recipe

  • Step #1 1/4 c unsalted butter 1/4 c all-purpose flour 6 cloves minced garlic 1 lemon -- juiced 6 c chicken broth 28 oz artichoke bottoms -- water : packed : cn (two 14-oz) -- drained : rinsed : Freshly ground black pepper 1.
  • Step #2 Melt butter over low heat/flame in a heavy-bottomed saucepan or stockpot.

  • Step #9 Process until smooth, slowly adding remaining broth.
  • Step #10 Add pepper & serve.
  • Step #11 Variations: Cream of Artichoke: Decrease chicken broth by 1/2 c & add l/2 c heavy or light cream to pureed soup.
  • Step #12 Substitute two 14-oz cans artichoke hearts, packed in water, for the artichoke bottoms.
