• 1 ts Finely sliced garlic
• 3/4 lb Arugula leaves
• Pepper
• Thin slices

• Step #1 Pick over the arugula leaves & remove & discard any tough stems.
• Step #2 Rinse & drain the leaves.
• Step #3 Pat dry.
• Step #4 Place the leaves in a salad bowl.
• Step #5 Add the onion slices, garlic, oil, vinegar, salt & pepper.
• Step #6 Toss & mix well.
• Step #7 Serve.
