Asparagus & Crab Strata Recipe

Ingredients
  • 1 Scallion, thinly sliced
  • 8 oz Fresh or canned lump crab meat, picked over and drained
  • Freshly ground black pepper
  • 1 tb Shredded coriander
  • 1 tb Plus 2 tsps nuoc mam
  • 4 c Chicken broth
  • 1/4 ts Salt
  • 15 oz White asparagus spears, cut into 1-inch sections with canning liquid reserved
  • 1/2 ts Sugar
  • 2 tb Cornstarch or arrowroot, mixed with 2 tbsps cold water
  • 6 Shallots, sliced
  • 2 Garlic cloves, sliced
  • 1 tb Vegetable oil
  • 1 Egg, lightly beaten

Directions
  • Step #1 mix the broth, 1 tbsp of the fish sauce, the sugar & salt in a 3 quart soup pot.
  • Step #2 Bring to a boil.
  • Step #3 Reduce the heat & let simmer.
  • Step #4 Meanwhile, heat the oil in a skillet.
  • Step #5 Add the shallots & garlic and stir-fry until aromatic.
  • Step #6 Add the crab meat, the remaining 2 tsps fish sauce & black pepper to taste.
  • Step #7 Stir-fry over high heat for 1 min.
  • Step #8 Set aside.
  • Step #9 Bring the soup to a boil.
  • Step #10 Add the cornstarch mixture & stir carefully until the soup thickens & is clear.
  • Step #11 While the soup is actively boiling, add the egg & stir carefully.
  • Step #12 Continue to stir for about 1 min.
  • Step #13 Add the crab meat mixture & asparagus with its canning liquid; cook carefully until heated through.
  • Step #14 Transfer the soup to a heated tureen.
  • Step #15 Sprinkle top on the coriander, scallion and freshly ground black pepper.
