Asparagus & Red Pepper Soup Recipe

Ingredients
  • 1/4 c Pimento;
  • 1 1/4 lb Fresh asparagus;
  • 1 c Water
  • 2 tb Lime juice; fresh
  • 1 tb Pine nuts;

Directions
  • Step #1 Rinse asparagus & snap off tough ends.
  • Step #2 In a large skillet bring water to boil & add asparagus.
  • Step #3 Cover & steam until bright grean, 2 to 3 mins.
  • Step #4 remove this from heat, drain & arrange on a platter.
  • Step #5 Sprinkle top with juice; garmish with pimento & pine nuts.
  • Step #6 Serve warm or chilled.
