Astakos Plaki - Lobster In Tomato Sauce With Recipe

Ingredients
  • 2 tb Peanut oil
  • 2 sm Carrots
  • 8 Baby sweet corn
  • 4 Green onions
  • 1/2 c Crab meat or shell shrimp
  • 1 pn Salt
  • 1/2 ts Fresh ginger root
  • 1 tb Chicken fat
  • 1/2 c Button mushrooms
  • 2 md Turnips
  • 2 c Chicken stock
  • 1 tb Tientsin vegetable
  • Cornstarch paste
  • 3 Fresh asparagus spears
  • 8 Water chestnuts
  • 1 ts Salt

Directions
  • Step #1 PREPARATION: Peal turnips & carrots.
  • Step #2 Use melon scoop to cut turnips into large balls.
  • Step #3 Slice carrots 1/2" thick; then with paring knife, cut 4 evenly spaced notches into rim of each slice (don't cut into core).
  • Step #4 Carrots should look like little flowers.
  • Step #5 Parboil turnip & carrots in stock until barely tender.
  • Step #6 remove this from stock & plunge pieces into cold water; drain.
  • Step #7 Cut onions, asparagus & baby corn into 1 1/2" pieces.
  • Step #8 Mince together fresh ginger root & Tientsin preserved vegetable.
  • Step #9 In small pot or beaker on medium heat, render pieces of chicken fat.
  • Step #10 STIR FRYING: Add peanut oil to hot wok.
  • Step #11 When it begins to smoke, briskly fry crab meat or shrimp for 1 min.
  • Step #12 Add asparagus, baby corn, mushrooms & water chestnuts, stir-frying until they are hot.
  • Step #13 Add ginger mixture, then onions.
  • Step #14 Stir-fry another 30 seconds.
  • Step #15 Add 1/ 2 stock, salt & sugar; bring to boil.
  • Step #16 Add turnips & carrots.
  • Step #17 Cover & reduce heat; simmer for 5 mins.
  • Step #18 Uncover, push ingredients out of liquid, & dribble in cornstarch paste to thicken slightly.
  • Step #19 Stir liquid to prevent lumping while it thickens to a thick soup.
  • Step #20 Remix, then mix in chicken oil.
  • Step #21 Remove to serving platter.
