Athenian Couscous Salad Recipe

Ingredients
  • 1 c Green split peas, covered with water for 1 hr, cooked f 1/2 ea hr, drained & mashed
  • 1 tb Corn oil
  • 1 ea Stir-fry the onion and garlic in a dry pan over moderately low
  • 1 sm Onion, sliced
  • 2 ea Garlic cloves, sliced fine
  • 1/2 ts Salt
  • 1/2 ts Ground tumeric
  • 1 sm Hot green chili, sliced fine
  • 1 c Water

Directions
  • Step #1 heat for 2 mins.
  • Step #2 Add the oil & stir-fry for 1 min.
  • Step #3 2.
  • Step #4 Add the mashed peas, tumeric, salt & chili; mix well.
  • Step #5 Add the water and cook for 3 to 4 mins to reduce the mixture to a thick, green, well-spiced puree.
  • Step #6 Serve warm with injeera.
