Aubergines In Sesame Sauce Recipe

Ingredients
  • 3 tb Fried breadcrumbs
  • 2 md Aubergines; sliced
  • Sunflower oil for frying

Directions
  • Step #1 CREOLE SAUCE--- 40 g Butter -OR sunflower margarine 1/2 Green pepper - deseeded & sliced 1/2 Onion; sliced 1 Garlic clove; crushed 400F g Canned tomatoes - finely sliced 1 Bay leaf 1 Pinch cloves 1 Pinch salt 1 Pinch pepper 1 Pinch chilli powder 1 Pinch sugar Serves 2-3 Browned slices of aubergine, Sprinkle topd with breadcrumbs & baked until golden are served with an exotic, spiced tomato sauce.
  • Step #2 Lovely with a crisp salad & some noodles or rice.
  • Step #3 Fry the sliced aubergines briskly in the olive oil for 2-3 mins on each side.
  • Step #4 Cook a few slices at a time.
  • Step #5 When all the aubergine slices are cooked, return them to the pan.
  • Step #6 Mix the shallots, garlic, parsley & breadcrumbs together.
  • Step #7 Sprinkle top this mixture over the aubergines, Spice up & cook over a low heat for a further 10 mins.
