Aunt Julie's Strawberry Roll Recipe

Ingredients
  • 1 3/4 oz Jar sliced pimento
  • 1 Chicken, cut up
  • 1/2 lb Calamari , cleaned and sliced
  • Cut into 1 1/2 inch julliene strips:
  • 1 Stalk celery
  • 1 lb Lean pork, cut into 1-inch cubes
  • 4 Chicken bouillon cubes
  • 1/2 lg Bell pepper
  • 2 1/2 c Uncle Ben's rice, uncooked
  • 1 ts Saffron threads
  • Salt & pepper to thaste
  • 1 c Frozen green peas
  • 5 c Water
  • 3 Hard boiled eggs, sliced
  • 4 oz Jar pimento-stiffed green olives
  • 1 lg Carrot
  • 1 md Onion, minced
  • 1/2 lb Unpeeled shrimp
  • 2 Toes garlic, minced
  • Oil for frying
  • 1 1/2 lb Peeled shrimp
  • 2 ts Capers, with juice

Directions
  • Step #1 In a large electric skillet or paella pan, brown the chicken pieces (that have been Spice uped with salt & pepper) in a little oil.
  • Step #2 remove this from the pan.
  • Step #3 Add the pork cubes to the drippinfs & brown for about 5 mins.
  • Step #4 remove this from the pan.
  • Step #5 To the pan drippings (add a little more oil if necessary) add the onion, garlic, bell pepper, celery & carrot.
  • Step #6 Stir-fry for 2 mins.
  • Step #7 Add the peas, chicken, pimentos, capers, peeled shrimp, calamari & pork.
  • Step #8 Stir.
  • Step #9 In a separate pot, bring the 5 c of water to a boil; stir in the the bouillon cubes & saffron.
  • Step #10 Let it stand for 5 mins until dissolved.
  • Step #11 carefully stir the rice into the skillet mixture.
  • Step #12 Slowly pour in enough of the bouillon mixture to cover the rice & chicken pieces.
  • Step #13 Cover & cook over low heat/flame for about 20 mins.
  • Step #14 Uncover and decoaratively arrange the egg slices & raw unpeeled shrimp on the top.
  • Step #15 (Add more broth as necessary to keep the rice moist.
  • Step #16 Cover and steam for another 10 mins until the shrimp are cooked & the rice is tender.
  • Step #17 (Paella should be moist but not wet!) Place the pan on a hot pad on the serving table & let everyone help themselves.
  • Step #18 Serve with a mixed green salad, red ripe tomatoes & some French bread.
  • Step #19 Also mix up a pitcher of Sangria & enjoy!.
