Ingredients
3 oz Canned lychees, drained; OR
2 c Oil, preferably peanut
1 sm Green bell pepper
1 Carrot
1 sm Red bell pepper
3/4 lb Lean boneless pork
1 tb Light soy sauce
1 -fresh orange in segments
1 Egg; beaten
2 tb Cornstarch
2 Scallions
1/2 ts Salt
1 tb Rice wine or dry sherry
Directions
Step #1 ---SAUCE------ 2/3 c Chicken stock 1 tb Light soy sauce 1/2 ts Salt 1 1/2 tb Chinese white rice vinegar -or cider vinegar 1 tb Sugar 1 tb Tomato paste 1 ts Cornstarch 1 ts Water CUT THE PORK INTO 1-INCH cubes.
Step #2 Put the cubes into a bowl together with the rice wine or sherry, 1 tbsp of light soy sauce & 1/2 tsp salt, & marinate for 20 mins.
Step #3 Meanwhile, cut the green & red peppers into 1-inch squares.
Step #4 Peel & cut the carrot and scallions into 1-inch chunks.
Step #5 Bring a pot of water to a boil and blanch the carrots in it for 4 mins; drain & set aside.
Step #6 Mix the egg & cornstarch in a bowl until they are well mixed into a batter.
Step #7 Lift the pork cubes out of the marinade, put them into the batter & coat each piece well.
Step #8 Heat the oil in a deep-fat fryer or large wok until it is almost smoking.
Step #9 Remove the pork pieces from the batter with a slotted spoon, & deep-fry them.
Step #10 Drain the deep-fried pork cubes on paper towels.
Step #11 mix the chicken stock, salt, vinegar, soy sauce, sugar & tomato paste in a large saucepan.
Step #12 Bring it to a boil.
Step #13 Add vegetables (not the lychees or oranges.
Step #14 ) Stir well.
Step #15 In a small bowl, mix together the cornstarch & water.
Step #16 Stir this mixture into the sauce & bring it back to a boil.
Step #17 Turn the heat down to a simmer.
Step #18 Add the lychees or oranges & pork cubes.
Step #19 Mix well, & then turn the mixture onto a deep platter.
Step #20 Serve at once.
