Step #1 ---FRUIT------ 1 ea Cantaloupe 8 ea Figs, fresh -OR- 2 pt Strawberries 2 c Green grapes 1/2 c Almonds, sliced Seed cantaloupe; cut into thin slices & peel.
Step #2 Cut figs into wedges or halve strawberries.
Step #3 Whisk yolks & sugar to mix in top of stainless steel double boiler.
Step #4 slowly whisk in half of sherry.
Step #5 Set over simmering water & whisk until mixture holds shape for 3 seconds when drizzled from whisk, about 5 mins.
Step #6 remove this from over water & put in the fridge until cool, whisking every once in awhile.
Step #7 Beat cream until soft peaks form.
Step #8 Fold into sabayon with remaining sherry & orange peel.
Step #9 Can be prepared 6 hrs ahead & chilled.
Step #10 To serve, arrange cantaloupe slices around center of plates.
Step #11 mix figs or strawberries & grapes & mound in center.
Step #12 Spoon sauce over & Sprinkle top with toasted almonds.
