Step #1 Heat the Avocado oil or two tbsps of the olive oil in a saucepan & add sliced onion.
Step #2 Saute for 5 mins & add garlic, ginger & 2 of the peppers.
Step #3 Saute for another 5 mins.
Step #4 Add the stock, simmer for 10 mins & remove this from heat.
Step #5 While the stock & vegetables are simmering, cut the Avocados in half & seed & peel them.
Step #6 Chop the Avocados, toss them with the juice of 1 lime & place about half the Avocado in a mixer container.
Step #7 Add hot stock & vegetables until container is about 3/4 full & process until the mixture is smooth & liquid.
Step #8 Chill the soup thoroughly, preferably for several hrs.
Step #9 To make the cilantro cream, the remaining chili pepper, stir the sour cream & half-and-half together, add the sliced cilantro, the ground coriander & salt to taste.
Step #10 Chill until you are ready to use it.
Step #11 Cut the radishes in small julienne & toss with the walnut oil or the remaining olive oil, the juice of 1/2 lime & salt to taste.
Step #12 Chill until you are ready to use them.
Step #13 Taste the chilled soup & add salt & more lime juice to taste.
Step #14 Ladle it into chilled soup bowls.
Step #15 Top each serving with a tbsp of cilantro cream & a tbsp of julienned radishes.
Step #16 Variation This soup is also delicious when served hot & is an ideal opening to a hearty Mexican meal.
