Lemon Zucchini Cookies Recipe

Ingredients
  • 2 Eggs
  • 2 tb Lemon juice
  • 1/2 c sliced nuts
  • 2 c Shredded zucchini
  • 1/2 ts Soda
  • 2 ts Hot water
  • 1 c Flour
  • 1 1/2 ts Lemon juice
  • 1/2 tb Butter or margarine
  • 1/4 c Cooking oil
  • 2/3 c Powdered sugar
  • 1/4 ts Salt
  • 1/2 c Packed brown sugar
  • 1 ts Grated lemon peel

Directions
  • Step #1 Mix together brown sugar, eggs, oil, lemon peel & juice until well mixd.
  • Step #2 Add flour, salt, soda, zucchini & nuts; stir just until mixd.
  • Step #3 Spread evenly in ungreased 10 x 6 micro-safe baking dish.
  • Step #4 Microwave (med-high 70%, uncovered, 7 mins, rotating dish once.
  • Step #5 Then, microwave (high) 2 1/2 to 3 1/2 min or until no longer dought, rotating dish once.
  • Step #6 Cool completely.
  • Step #7 mix powdered sugar and margarine in micro-safe bowl.
  • Step #8 Microwave (high), uncovered 15-20 seconds or until margarine is softened.
  • Step #9 mix in lemon juice and enough water until of spreading consistency.
  • Step #10 Spread over bars.
  • Step #11 Cut into squares.
