  • Step #1 ---CRUST------ 15 Vanilla wafers 15 Gingersnaps 3 tb Sugar 1 tb Lemon peel; grated 1/4 c Unsalted butter; melted--FILLING----- 1 tb Unflavored gelatin; plus 3/4 ts Unflavored gelatin 1/4 c Cold water 2 Zest; from lemons 1 Fresh ginger; 1" piece peele 3/4 c Sugar; plus 2 tb Sugar Salt; pinch 3 Egg yolks; large 3/4 c Whole milk 12 oz Cream cheese; room temp 1/3 c Lemon juice; fresh 1 1/2 c Whipping cream; chilled 1 c Lemon curd CRUST: preheat your trusty oven to 350.
  • Step #2 Position rack in center of oven.
  • Step #3 Lightly oil 9" springform pan.
  • Step #4 Finely grind all wafers and gingersnaps w/ sugar & lemon peel in FP.
  • Step #5 Add butter & mix well.
  • Step #6 Sprinkle top crumbs over bottom of prepared pan.
  • Step #7 Press to form buttered crust.
  • Step #8 bake this until golden brown; 12 mins.
  • Step #9 Cool before filling.
  • Step #10 FILLING: Sprinkle top gelatin over cold water in small bowl.
  • Step #11 let this stand 10 mins to soften.
  • Step #12 Mince lemon peel & ginger with sugar & salt in FP until all are as fine as sugar.
  • Step #13 Really zap it.
  • Step #14 Add yolks in FP & mix until Light & fluffy.
  • Step #15 Scald milk in heavy sauce pan.
  • Step #16 With FP running; add milk through feed tube & mix well.
  • Step #17 Return mixture to sauce pan.
  • Step #18 Stir over med.
  • Step #19 to low heat until mixture thickens; about 12 min.
  • Step #20 Do NOT BOIL.
  • Step #21 Add gelatin mixture to custard & stir until dissolved.
  • Step #22 Refectories until thickened but not set (about 20 min), stirring often.
  • Step #23 mix cream cheese & lemon juice in FP until smooth.
  • Step #24 Add custard (the stuff from the fridge) & mix until smooth.
  • Step #25 pour this into large bowl.
  • Step #26 Whip cream in med bowl till it holds soft peaks.
  • Step #27 carefully fold into custard filling.
  • Step #28 Pour 1/2 of filling over crust.
  • Step #29 Spoon 1/2 of lemon curd by T'sponfulls over filling.
  • Step #30 Swirl mixtures together using tip of knife.
  • Step #31 Pour remaining filling over.
  • Step #32 Spoon remaining curd over & repeat swirl.
  • Step #33 put in the fridge at least 4 hrs or overnight.
  • Step #34 Run knife around sides of cake.
  • Step #35 Release pan.
  • Step #36 & you thought it was easy---at least you don't have to bake.
