Lemon-poppy Seed Tarts Recipe

Ingredients
  • 2 ts Lemon zest, finely grated
  • 1/4 ts Salt
  • 1 ts Baking powder
  • 2 Egg whites
  • 1/2 ts Baking soda
  • 1/4 c Sugar
  • 1/4 c Yogurt, plain - nonfat
  • 1 tb Poppy seeds
  • 1 1/2 c Unbleached flour
  • 1 tb Lemon juice
  • 3/4 c Milk, nonfat

Directions
  • Step #1 Prep time: 15 mins Cook time: 10 mins mix flour, poppy seeds, sugar, baking powder, baking soda and salt.
  • Step #2 Make a well in the center of the flour mix.
  • Step #3 Mix milk, yogurt, egg whites, lemon juice & lemon zest in another bowl.
  • Step #4 Pour milk mixture into the well of the flour mix & stir well to mix.
  • Step #5 Coat a griddle or large nonstick fry pan with nonstick cooking spray.
  • Step #6 Place over medium-high heat until hot.
  • Step #7 Spoon 1/3 c of batter onto hot griddle until batter is used up.
  • Step #8 Flip each pancake when tiny bubbles cover surface, about 3 mins.
  • Step #9 cook this until bottom is golden brown, about 2 mins.
  • Step #10 Divide onto 4 plates.
  • Step #11 extra note: Poppy seeds contain alot of oil & can go rancid quickly.
  • Step #12 Be sure to store this in a cool, dark place for up to 6 months.
