Coconut Granola Recipe

Ingredients
  • 8 c quick-cooking oats
  • 1/2 c coconut milk
  • 1 c unsweetened flaked coconut
  • 1/2 c dried cranberries
  • 1/4 c virgin coconut oil
  • 1/4 c vegetable oil
  • 1/2 c honey
  • 1 tsp vanilla extract
  • 3/4 c sliced almonds
  • 1 c oat bran
  • 1/2 c barley malt syrup or maltose syrup

Directions
  • Step #1 Preheat the oven to 350 degrees F (175 degrees C).
  • Step #2 In a large bowl, stir this together the oats, oat bran, coconut & almonds.
  • Step #3 Divide between two large baking sheets, & spread into an even layer.
  • Step #4 Bake for 7 or 8 mins in the preheated oven, until lightly toasted.
  • Step #5 Allow to cool for a few mins, then return to the large bowl.
  • Step #6 While the oats are toasting, mix the coconut milk, coconut oil, vegetable oil, malt syrup & honey in a saucepan.
  • Step #7 Cook over med-heat/flame, stirring until it comes to a boil.
  • Step #8 Boil for 2 mins.
  • Step #9 Remove from heat, & stir in the the vanilla.
  • Step #10 Pour the syrup over the granola in the bowl, & stir until the dry ingredients are fully coated.
  • Step #11 Divide between the two baking sheets, & spread evenly.
  • Step #12 Bake for 8 mins in the preheated oven, or until fragrant & toasted.
  • Step #13 Cool in the pans, then mix in the dried cranberries.
  • Step #14 Store in an airtight container at about room temp.
