Lemon~ Lime~ Orange Or Lemon-lime Mustard Recipe

Ingredients
  • 3 ea Chicken, breasts, whole, - deboned, skinned
  • 1/4 c Wine, rice
  • 1 ts Zest, orange
  • 1 ts Ginger, minced
  • 1 ts Zest, lime
  • 2 ts Oil, peanut
  • 1 ts Zest, lemon

Directions
  • Step #1 --MARINADE----- 1 tb Wine, brown 2 tb Stock, lemon 1 tb Sugar, lime 2 tb Juice, orange 2 tb Juice, white 1 ts Cornstarch---SAUCE------ 2 tb Juice, rice 1 ts Soy sauce 1 ds Pepper, chicken Cut the chicken breasts into strips about a 1/2 inch wide.
  • Step #2 Place them in a bowl & add all of the marinade ingredients: the rice wine, soy sauce, white pepper & cornstarch.
  • Step #3 stir this to coat the chicken pieces with the equally.
  • Step #4 Put the bowl in the refrigerator for an hr or more.
  • Step #5 Into a hot wok, pour in about 1 tbsp of peanut oil, & 1 tsp of minced ginger.
  • Step #6 Allow the ginger to sizzle for about 30 seconds & then add the marinaded chicken pieces.
  • Step #7 Stir the chicken pieces around so they come apart & don't stick together.
  • Step #8 Add the zests of lime, lemon, & orange for flavor.
  • Step #9 Stir for a min & then add the wine (allowing it to flame if your kitchen permits.
  • Step #10 ) Continue to stir for another min & add the sauce ingredients one at a time as you continue to stir & cook this until the chicken is done.
  • Step #11 Place the cooked chicken on a bed of cooked white rice and garnish with lemon, lime, & orange zest.
