Lentil & Potato Stew With Spiced Oil Recipe

Ingredients
  • 1/2 c Onions, sliced
  • 2 c Macaroni or other pasta brok
  • 1 lb Lentils, dried
  • 1/4 c Olive oil
  • 1/2 c Celery, sliced
  • 1 x Salt & freshly ground pepper
  • 1 c Tomatoes, crushed

Directions
  • Step #1 Fat grams per serving: Approx.
  • Step #2 Cook Time: 100 Wash the lentils thoroughly.
  • Step #3 Place them in a large saucepan with cold water to cover & cook over med-heat/flame for about 1-1/2 hrs, until tender.
  • Step #4 In a seperate saucepan, heat the oil.
  • Step #5 Add the celery & onions and saute until golden brown.
  • Step #6 Add the tomatoes & let simmer for 10 mins.
  • Step #7 Add to the lentils.
  • Step #8 Bring 2 Qts.
  • Step #9 of salted water to a boil in a kettle.
  • Step #10 Add the macaroni & cook for 10 mins.
  • Step #11 Drain.
  • Step #12 Add the macaroni to the lentils, Spice up this with salt & pepper & let simmer slowly until the pasta is tender.
  • Step #13 Serve accompanied by a tossed green salad & a favorite cheese.
