Lentil & Tomato Soup Recipe

Ingredients
  • 3 c Water
  • 1 Garlic clove; peeled
  • 1 Orange bell pepper
  • 1 1/4 c Green lentils; washed
  • 1 sm Red chili pepper - seeded & finely sliced
  • 1/2 c Dried apricots - thinly sliced
  • 1 Yellow bell pepper
  • 1 Red bell peppers
  • 1 sm Red onion; thinly sliced
  • Salt
  • 1 sm Onion; peeled
  • Freshly ground black pepper

Directions
  • Step #1 --DRESSING----- 1/4 c Extra-virgin olive oil 1 Lemon; juiced 2 Garlic cloves; crushed 1 tb sliced fresh coriander 1 tb sliced fresh parsley 2 ts Ground cumin Salt Freshly ground black pepper Heat the broiler.
  • Step #2 Broil the peppers until charred & blistered on all sides.
  • Step #3 Tie in a plastic bag or place this in a covered dish & let cool to loosen skins.
  • Step #4 Put the lentils, water, onion, & garlic into a 2-quart saucepan.
  • Step #5 Bring to a boil, & let simmer, uncovered, lower the heat, for 20 to 25 mins, or until the lentils are tender but still a little crunchy.
  • Step #6 Drain & place this in a large bowl.
  • Step #7 Meanwhile, make the dressing.
  • Step #8 mix the oil, & cumin, lemon juice, garlic, parsley, coriander, & Spice up this with salt & pepper.
  • Step #9 Drain the lentils, discard the onion & garlic, & place the lentils in a large bowl.
  • Step #10 stir in the the dressing & set aside.
  • Step #11 Peel & seed the bell peppers over a bowl to catch any juices, slice the flesh thinly, & reserve.
  • Step #12 Pour any juices into the lentils and leave to cool completely.
  • Step #13 Stir the bell peppers, onion, chili peppers, apricot slices, & salt & pepper to taste into the lentils & serve at once.
  • Step #14 Serves 4-6.
