Lentil & Tomato Soup Recipe

Ingredients
  • 8 oz Lentils, cooked
  • 3 tb Vegetable oil
  • 1/2 ts Cumin
  • 1 lg Carrot, sliced
  • 1 ea Celery stick, sliced
  • 1 ts Miso
  • 14 oz Canned tomatoes, sliced
  • 1 3/4 c Stock
  • 1 ts Rosemary
  • Salt, to taste
  • 2 lg Onions, sliced
  • 1 pn Arame seaweed
  • 1 sm Garlic clove, crushed

Directions
  • Step #1 Heat the oil in a soup pot & saute the onions, garlic & rosemary for 5 mins.
  • Step #2 Add the stock, carrot, celery, lentils, tomatoes & seaweed.
  • Step #3 Bring to a boil, reduce heat, cover & simmer for 20 mins.
  • Step #4 mix the contents till smooth with the miso, cumin & salt.
  • Step #5 Reheat & serve hot.
