Step #1 1 c lentils, crushed 2 c stewed tomatoes 2 tsps salt 1 tsp cumin I tsp ground coriander seeds 1/2 tsp pepper 1/8 tsp cayenne 1/4 c white rice, rinsed 7 c water 1 tbsp olive oil 2 medium size onions, sliced 4 cloves garlic, uncooked 1/4 c lemon juice Place lentils & water in a saucepan & bring to boil.
Step #2 Cover & cook over med-heat/flame for 25 mins.
Step #3 In the meantime, in a frying pan, heat oil & sout6 onions and garlic until they turn golden brown.
Step #4 stir in the remaining ingredients, except lemon juice, & sout6 for another 5 mins.
Step #5 Stir the frying pan contents into the lentils & bring to boil.
Step #6 Cover & cook over low heat/flame for 20 mins or until rice & lentils are well-cooked.
