Lentils & Spanish Rice Enchiladas Recipe

Ingredients
  • 1 Box Spanish Quick Brown Rice
  • 15 Corn tortillas; moistened
  • 2 c Water
  • 1/2 c Lentils
  • 2 c Grated cheese
  • 16 oz Enchilada sauce

Directions
  • Step #1 Prepare contents of box according to package directions.
  • Step #2 Cook lentils in the 2 c of water & drain off excess water.
  • Step #3 (Note: lentils and rice will cook in the same amount of time).
  • Step #4 Mix the rice & lentils & place 2 tbsps full in each tortilla & roll.
  • Step #5 place this in a 9 x 13 pan & cover with enchilada sauce.
  • Step #6 Sprinkle top with cheese and place this in oven for 20 mins at 300F F.
