Light & Easy Lasagna Recipe

Ingredients
  • 1/2 ts Freshly ground pepper
  • 3 Garlic cloves, finely sliced
  • 1 lb Part-skim ricotta cheese
  • 2 ts Dried leaf oregano, crushed
  • 3 md Onions, sliced
  • 1/2 ts Dried marjoram, crushed
  • 1/2 ts Dried leaf thyme, crushed
  • 1 c sliced fresh parsley
  • 56 oz Italian-style plum tomatoes, undrained
  • 2 oz Imported Parmesan cheese, grated
  • 24 oz Italian tomato paste
  • 1/2 lb Lasagna noodles
  • 1/2 lb Part-skim mozzarella cheese

Directions
  • Step #1 1.
  • Step #2 Put onions & garlic in large saucepan.
  • Step #3 Cook, covered, over low heat until tender, adding a little water if necessary to prevent scorching.
  • Step #4 Add tomatoes, tomato paste, thyme, parsley, oregano, marjoram & pepper.
  • Step #5 Simmer, covered, stirring every once in awhile, about 2 hrs.

  • Step #7 Cook lasagna noodles in boiling water until al dente, about 12 mins.
  • Step #8 Drain in colander; rinse with cold water.
  • Step #9 Drain well.

  • Step #11 Heat oven to 350 degrees.
  • Step #12 Cover bottom of lightly oiled 13 by 9-inch baking dish with 1/4 of the sauce.
  • Step #13 Add layer of lasagna noodles.
  • Step #14 top this with 1/3 of the ricotta cheese, then 1/3 of the mozzarella.
  • Step #15 Sprinkle top with 1/4 of the Parmesan cheese.
  • Step #16 Cover with 1/4 of the sauce.
  • Step #17 Repeat procedure 2 more times.
  • Step #18 Sprinkle top remaining Parmesan cheese on top.
  • Step #19 4.
  • Step #20 bake this until sauce is bubbly & cheese is melted, about 45 mins.
  • Step #21 let this stand 10 mins before serving.
