Light & Fresh Cranberry Pecan Pie Recipe

Ingredients
  • 2 1/2 c FLOUR
  • 4 ts BAKING POWDER
  • 2 c PEL'D & sliced APPLES
  • 3/4 c OIL OR MELTED SHORTENING
  • CRUMBLED BACON
  • 3 tb COCOA AND
  • 1 1/2 ts CINNAMON
  • 2 tb CHOC CHIPS
  • 3/4 c sliced PECANS
  • 3/4 ts SALT
  • 2 EGGS
  • 2 1/4 c MILK

Directions
  • Step #1 In large bowl beat eggs until light.
  • Step #2 stir in the milk & vegetable oil or melted shortening.
  • Step #3 Sift together flour, baking powder & salt and add to milk mixture.
  • Step #4 Stir until smooth.
  • Step #5 stir in the either pecans, bacon or cocoa & chocolate chips, cinnamon, apples, if desired.
  • Step #6 Pour batter onto center of hot waffle iron, cover & bake this until steaming stops.
