Light & Zesty Chicken & Rice Recipe

Ingredients
  • 1/4 c Frozen concentrated Orange J
  • 1 ts Unflavored gelatin
  • 1/2 c Nonfat dry milk powder
  • 1/2 ts Vanilla
  • 1/2 c Cold water
  • 24 Graham crackers
  • 1 tb Lemonjuice
  • 2 tb Sugar

Directions
  • Step #1 Chill a small mixing bowl & beaters.
  • Step #2 In the top section of a double boiler, soften gelatin in the melted concentrated Orange Juice.
  • Step #3 Place over hot water,and stir until the gelatin is completely dissolved.
  • Step #4 remove this from heat & stir in the the sugar & vanilla.
  • Step #5 Using cold beaters, beat dry milk & water until soft peaks form.
  • Step #6 Add the lemon juice & beat until stiff.
  • Step #7 Fold in orange juice mixture.
  • Step #8 Spread on 12 Graham crackers.
  • Step #9 top this with the remaining crackers.
  • Step #10 Wrap individually; freeze until firm about 2 hrs.

  • Step #13 Exchanges per sandwich: 1/2 non fat milk, Na 121, cho 17, K 181, 1 fruit Cal 89, pro 3, fat 1, 1/2 tsp sugar (8 cal) per serving.
