Light Hollandaise Recipe

Ingredients
  • 4 tb Butter; melted
  • 1 c Rice, medium grained uncooked
  • 1 lg Egg; lightly beaten
  • 1 ts -Salt
  • 1 pn -Freshly ground black pepper
  • 1/2 c Milk
  • 1 c Cheddar cheese; medium-sharp grated
  • 1/4 ts Tabasco; or other hot pepper sauce
  • 2 tb Onion; finely sliced
  • 2 ts -Dried dill
  • 2 tb Dill, fresh; OR

Directions
  • Step #1 "For a picnic, serve these squares of cheese, & other herb-flavored rice warm or at about room temp.
  • Step #2 They are also delicious eaten hot with tomato sauce & thin slices of cold rare roast lamb or beef.
  • Step #3 " preheat your trusty oven to 350F.
  • Step #4 In a medium saucepan, salt, mix rice, & 2 c water.
  • Step #5 Bring to a boil over high heat.
  • Step #6 Cover tightly, reduce heat to lowest setting, & cook for 15 to 18 mins, or until rice is tender but still lightly firm to the bite.
  • Step #7 remove this from heat and fluff rice with fork.
  • Step #8 In a large mixing bowl, cheese, onion, dill, parsley, mix butter, egg.
  • Step #9 milk, Tabasco & black pepper & mix well.
  • Step #10 Add rice & toss to mix well.
  • Step #11 Press mixture evenly into a lightly buttered 8 or 9 inch square baking dish.
  • Step #12 Bake in the centre of the oven for 35 to 45 mins, or until rice is beginning to brown lightly around the edges & becomes crusty.
  • Step #13 remove this from oven & let cool for 20 mins before cutting.
  • Step #14 Run a small knife around the edges of dish & cut rice into 2-inch squares.
