Light Sour Cream Dip Recipe

Ingredients
  • 4 ts Fresh lemon zest, finely grated
  • 2 tb Olive oil
  • 1/4 c Lemon juice
  • 2 ts Cornstarch
  • Freshly ground pepper
  • 1 lb Medium-sized shrimp, shelled and deveined
  • 1/2 c Dry white wine
  • Cooked pasta - fine strands
  • 4 md Garlic cloves, sliced fine
  • 1 c Rich, salt-free fish stock
  • 1/4 c Italian parsley, finely sliced

Directions
  • Step #1 In a large skillet, heat the oil with the garlic over moderate-to-high heat.
  • Step #2 When the garlic sizzles, add the shrimp & saute just until they turn pink, about 1 min.
  • Step #3 stir in the the fish stock, wine, parsley, & lemon zest.
  • Step #4 In a small c or bowl, stir the cornstarch into the lemon juice until it dissolves, then stir that mixture into the ingredients in the skillet.
  • Step #5 Simmer until the sauce begins to thicken slightly, about 1 min.
  • Step #6 Spoon the sauce over cooked pasta.
  • Step #7 Spice up generously with black pepper.
