Lima Bean Health Loaf Recipe

Ingredients
  • 1 1/2 c Cheddar cheese, shredded
  • 1 md Onion, sliced
  • 1 1/2 c Milk
  • 3 tb Flour, whole wheat
  • 3 c Lima beans, cooked, dried, drained
  • 3 tb Catsup

Directions
  • Step #1 preheat your trusty oven to 350F.
  • Step #2 mix beans, catsup, onion, & flour in a shallow 2 quart casserole.
  • Step #3 Add 1 c cheese.
  • Step #4 Pour milk over beans, top this with remaining cheese.
  • Step #5 Bake uncovered for 30 mins until sauce is thickened & bubbling.
  • Step #6 As it cools, the sauce will thicken further.
  • Step #7 We serve this with Irish Soda Bread, & mixed vegetables or a salad.
  • Step #8 You can bake the soda bread while the beans are cooking, & then pop the casserole into the already hot oven.
