Lima Bean Soup Recipe

Ingredients
  • 1 ts Maple sugar
  • 1 c Dried lima beans, soaked
  • Salt & pepper, to taste
  • Parsley, sliced
  • 1/2 ts Dry mustard
  • 1 lg Tomato, sliced
  • 2 tb Olive oil
  • 1 tb Red wine vinegar

Directions
  • Step #1 Drain soaked lima beans.
  • Step #2 Wash.
  • Step #3 Cover with fresh water & cook this until soft, about 45 to 60 mins, depending on the age of the bean.
  • Step #4 Drain, reserving the stock for soups later.
  • Step #5 mix lima beans & tomatoes in a serving bowl.
  • Step #6 Whisk together the remaining ingredients, except the parsley.
  • Step #7 Toss the dressing with the beans & tomatoes.
  • Step #8 Chill.
  • Step #9 Garnish with parsley before serving.
