Lima Beans & Mushrooms Recipe

Ingredients
  • 1 cl Garlic; minced
  • 1/4 c Onion; sliced
  • 1 tb Lemon juice
  • 24 New potatoes, cokked
  • 1 tb Parsley; sliced
  • 1/2 ts Dill
  • 1 c Lima beans; cooked
  • 1/4 c Yogurt, plain

Directions
  • Step #1 Preheat the oven to 350^F.
  • Step #2 mix all ingredients except the yogurt & new potatoes in a non stick skillet.
  • Step #3 Cook over med-heat/flame until onions are tender, about 5 min.
  • Step #4 pour this into a food processor/blender or mixer & add yogurt.
  • Step #5 Process until smooth.
  • Step #6 Cut a thin slice off of the bottom of each potato so it will not rool.
  • Step #7 Scoop out a small amount of potato & fill cavity with the lima bean mixture.
  • Step #8 Heat the stuffed potatoes for 10-15 min before serving.
  • Step #9 One serving of 4 potatoes = 187 cal pro 5gm, pro 32gm, fat 2gm, sodium 72mg exchanges: 2 starch/bread.
