Ingredients
  • 1/2 c shredded reduced-fat Cheddar cheese
  • 2 jars sliced pimento drained
  • 2 tb Reduced-calorie ketchup
  • 1 tb All-purpose flour
  • 1/8 ts Pepper
  • Vegetable cooking spray
  • 1/2 ts Salt
  • 1 tb Reduced-calorie margarine
  • 1 pk frozen lima beans
  • 1 c Skim milk

Directions
  • Step #1 Cook beans according to package directions, ommitting salt & fat.
  • Step #2 Drain & set aside.
  • Step #3 Melt margarine in a medium saucepan over low heat/flame; add flour, stirring until smooth.
  • Step #4 Cook, stirring constantly, 1 min.
  • Step #5 slowly add milk; cook over med-heat/flame, stirring constantly, until thickened & bubbly.
  • Step #6 stir in the salt & pepper.
  • Step #7 remove this from heat.
  • Step #8 Add beans, cheese, ketchup & pimento to sauce; stir well.
  • Step #9 Spoon into a 1 1/2-quart casserole coated with cooking spray.
  • Step #10 bake this at 375 degrees for 30 mins or until thoroughly heated.
  • Step #11 Yield: 6 servings.
