Lime-lite Chicken Recipe

Ingredients
  • 3 tb Fresh lime juice
  • 1/4 ts Salt
  • 4 Cloves garlic, crushed
  • 1 tb sliced purple onion
  • 2 c Water
  • 1/2 c Unsweetened orange juice
  • Vegetable cooking spray
  • 1 c Drained canned black beans
  • 2 tb Vegetable oil
  • Fresh cilantro sprigs
  • 1/8 ts Freshly ground black pepper
  • 2 Cloves garlic, crushed
  • 1/4 ts Ground red pepper
  • 4 Skinned, boned chicken breast halves
  • 2 tb Balsamic vinegar
  • 1/2 c sliced red bell pepper

Directions
  • Step #1 Directions: mix first 4 ingredients in a large zip-top heavy-duty plastic bag.
  • Step #2 Add chicken; seal bag, & marinate in refrigerator 8 hrs, turning bag every once in awhile.
  • Step #3 Remove chicken from bag, reserving marinade.
  • Step #4 Coat the grill rack with cooking spray; place on grill over medium-hot coals.
  • Step #5 Place chicken on rack, & cook 10 mins on each side or until chicken is done, basting every once in awhile with reserved marinade.
  • Step #6 Set aside, & keep warm.
  • Step #7 Bring water to a boil in a small saucepan; add bell pepper & onion.
  • Step #8 Cook 30 seconds; drain.
  • Step #9 Plunge into ice water; drain well.
  • Step #10 Set aside.
  • Step #11 Position knife blade in food processor/blender bowl; add beans & next 5 ingredients.
  • Step #12 Process until smooth.
  • Step #13 pour this into a saucepan, & cook over medium heat until heated.
  • Step #14 Spoon 1/4 c plus 1 tbsp bean mixture onto each of 4 serving plates.
  • Step #15 Place 1 chicken breast half on top of sauce; top each with 2 tbsps bell pepper mixture.
  • Step #16 Garnish with fresh cilantro, if desired.
