Linda's Potato Wedges Recipe

Ingredients
  • 6 md Baking potatoes
  • 1/3 c Butter
  • 1/3 c Milk | You can add these ingredients to the
  • 6 sl Bacon, fried & crumbled
  • 1/4 c Butter | mashed potato centers for mashed
  • Salt & Pepper -
  • 1/3 c Green onion, thinly sliced
  • 3/4 c Cheddar cheese, shredded

Directions
  • Step #1 Salt & Pepper | potatoes, if desired.
  • Step #2 - - Scrubb potatoes, dry, then pierce with fork several times.
  • Step #3 Arrange on a baking sheet & bake in 375 degree oven for about 1 hr or until tender.
  • Step #4 let this stand until cook enough to handle.
  • Step #5 Cut potatoes in half lengthwise & scoop out centers, leaving 1/8" potato in shell.
  • Step #6 Cover.
  • Step #7 Chill shells up to 2 days until ready to use for the skins.
  • Step #8 If desired, add the 1/3 c milk, 1/4 c butter, salt & pepper to use potato centers as mashed potatoes.
  • Step #9 When ready to prepare skins, melt the 1/3 c butter.
  • Step #10 Brush shells with the butter, inside & out.
  • Step #11 Place, cut side up, on baking sheet.
  • Step #12 Bake in a 500 degree oven for 20 mins or until brown and crisp.
  • Step #13 Distribute some bacon, onion, & cheese in each shell.
  • Step #14 Bake just until cheese melts.
  • Step #15 Serve hot.
  • Step #16 If the potatoes are large, you may want to cut in half crosswise before serving.
  • Step #17 You may want to double this recipe if you are serving several people, especially if they are hungry!.
