Ingredients
6 md Baking potatoes
1/3 c Butter
1/3 c Milk | You can add these ingredients to the
6 sl Bacon, fried & crumbled
1/4 c Butter | mashed potato centers for mashed
Salt & Pepper -
1/3 c Green onion, thinly sliced
3/4 c Cheddar cheese, shredded
Directions
Step #1 Salt & Pepper | potatoes, if desired.
Step #2 - - Scrubb potatoes, dry, then pierce with fork several times.
Step #3 Arrange on a baking sheet & bake in 375 degree oven for about 1 hr or until tender.
Step #4 let this stand until cook enough to handle.
Step #5 Cut potatoes in half lengthwise & scoop out centers, leaving 1/8" potato in shell.
Step #6 Cover.
Step #7 Chill shells up to 2 days until ready to use for the skins.
Step #8 If desired, add the 1/3 c milk, 1/4 c butter, salt & pepper to use potato centers as mashed potatoes.
Step #9 When ready to prepare skins, melt the 1/3 c butter.
Step #10 Brush shells with the butter, inside & out.
Step #11 Place, cut side up, on baking sheet.
Step #12 Bake in a 500 degree oven for 20 mins or until brown and crisp.
Step #13 Distribute some bacon, onion, & cheese in each shell.
Step #14 Bake just until cheese melts.
Step #15 Serve hot.
Step #16 If the potatoes are large, you may want to cut in half crosswise before serving.
Step #17 You may want to double this recipe if you are serving several people, especially if they are hungry!.
