Ingredients
1/4 ts Cinnamon, ground
10 oz Fruit spread, raspberry
1/8 ts Allspice, ground
1 c Flour
2 ts Extract, vanilla
1/4 ts Salt
1/4 c Butter; softened
2 tb Juice, apple, conc.
1/2 ts Baking powder
1 1/2 c Almonds, ground
2 Egg yolks
Directions
Step #1 Use blanched almonds or hazelnuts.
Step #2 Beat butter in large bowl until light & fluffy.
Step #3 mix in egg yolks, juice concentrate, & vanilla.
Step #4 mix flour, cinnamon, baking powder, salt, & allspice; mix well.
Step #5 stir in the almonds.
Step #6 slowly add to butter mixture, mixing until well-mixed.
Step #7 Spread 1-1/2 c batter evenly onto bottom of 10" tart pan with removable bottom or 10" springform pan.
Step #8 Spread fruit evenly over batter, leaving 1" border around edge.
Step #9 Spoon remaining batter into pastry bag fitted with 1/2" plain or star tip.
Step #10 Pipe batter in lattice design over fruit spread.
Step #11 Chill 30 mins.
Step #12 preheat your trusty oven to 350.
Step #13 Bake tart 35 mins, until crust is golden brown & fruit spread is bubbly.
Step #14 Cool completely on wire rack.
Step #15 Serve at about room temp.
Step #16 Nutrition information per slice: 486 calories, 3/4 diabetic starch/bread exchange, 276 mg sodium, 8 gm protein, 63% of calories from fat, 2 diabetic fruit exchange, 34 gm fat, 41 gm carbohydrate, 6-1/4 diabetic fat exchange, 100 mg cholesterol, 1/2 diabetic medium-fat meat exchange.
