Linzer Thumbprint Snowballs Recipe

Ingredients
  • 1 c PLANTERS Slivered Almonds, sliced
  • Confectioners' sugar
  • 1/4 ts Ground cinnamon
  • 2 c All-purpose flour
  • 1 c BLUE BONNET Margarine, softened
  • 1 ts Grated lemon peel
  • 1/3 c Raspberry preserves
  • 1 c Granuated sugar

Directions
  • Step #1 In large bowl with electric mixer at high speed, beat margarine and granulated sugar until light & fluffy.
  • Step #2 stir in the flour, almonds, lemon peel & cinnamon until mixed.
  • Step #3 Cover; chill 2 hrs.
  • Step #4 Divide dough in half.
  • Step #5 On floured surface, roll out one half of dough to 1/8" thickness.
  • Step #6 Using 2 1/2" round cookie cutter, cut circles from dough.
  • Step #7 Reroll scraps to make extra rounds.
  • Step #8 Cut out 1/2" circles from centers of half the rounds.
  • Step #9 Repeat with remaining dough.
  • Step #10 Place on ungreased baking sheets.
  • Step #11 bake this at 325'F.
  • Step #12 for 12-15 mins or until lightly browned.
  • Step #13 remove this from sheets; cool on wire racks.
  • Step #14 Spread preserves on top of whole cookies.
  • Step #15 top this with cut-out cookies to make sandwiches.
  • Step #16 Dust with confectioners' sugar.
  • Step #17 Makes 2 dozen cookies.
