Lite Bran Muffins Recipe

Ingredients
  • 1 ts Pumpkin pie spice
  • 2 1/4 c Lowfat evaporated milk; UNDILUTED & divided
  • 1 ts Vanilla extract
  • 2 tb Cold water
  • 16 oz Can solid pack pumpkin
  • 2 pk Unflavored gelatin
  • 6 tb Dark brown sugar; packed OR low-cal sweetener equivalen

Directions
  • Step #1 In medium bowl, Sprinkle top gelatin over cold water to soften; set aside.
  • Step #2 In small saucepan, heat 1 c of the evaporated milk to just boiling.
  • Step #3 Slowly stir hot milk into gelatin; stir until gelatin is dissolved.
  • Step #4 Mix in remaining evaporated milk, pumpkin pie spice, brown sugar, the pumpkin, & vanilla; set aside.
  • Step #5 Spray 10-inch glass pie plate with non-stick vegetable coating.
  • Step #6 Pour mixture into pie plate; chill until firm.
  • Step #7 Calories: 97 Fat: 2 g Sodium: 70 mg Cholesterol: 4 mg.
